Add the canola oil to a cast-iron skillet and place over medium heat. Add the onion and sauté for 1 to 2 minutes. Add the garlic and sauté 1 minute more, then stir in the pernil, salsa verde, and sofrito. Season with salt and pepper, turn the heat to low, and let simmer until warmed through.

Spoon the chile verde onto tortillas and serve immediately.

There are some Puerto Rican recipes that I’ll just never come to enjoy. Like the comingling of canned cheese and mayonnaise. Why, lord, why? But those who like pimento cheese might enjoy its tropical cousin, mezcla. This seemingly innocent concoction makes appearances at any fancy Puerto Rican party or high tea—a sludgy, unnatural coral-colored schmear on the unholiest of white breads. And then people have the audacity to cut the entire thing into triangles with the crusts removed. This recipe makes about 4 cups of mezcla. Instead of mayo, I use mascarpone. Instead of Wonder Bread, I use rustic country bread for texture.
